Hi,
Once the file system is back up and running you'll be able to download a full set of 747 measurements from memory which (I think) has pedestal measurements and MIP along with others. Also, Phil (phil744) has shared with us a great 3D nose section of the 747 which you can download once the file system is up and running again.
You can buy some great knobs here (http://www.simknobs.com/pagina3.html). If you want simple on off switches then your local electronics store should have them, otherwise places like FlyEngravity and other sim companies have great products - most of them have forums here on this website.
Hope this helps,
Lewis

Also, seeing you're in Oz, a company in Brisbane sells knobs. Their website is here (http://sites.google.com/site/flightfacsimile/home).
