With V2.0.8 installed, after making sure the SideStick/Rudder are calibrated (center being 500), MSFS was showing the rudder being about 30% Left off of the center line (100% being full deflection). and the aileron, about 30% left and Elevator 30% up.

I just figured something out.....
The Control surfaces analogs are going from 0-16xxx, rather the -16xxx to +16xxx, I think, like prior to Ver 2?
I think "9" will be a lucky number :D

MattO,
I had smae problem with analog inputs.
You picked up problem about same time I did.
2.0.9 wiil fix that.
Hopefully, I'll also have servos smoothed out.
Between David and his trusty oscilloscope we may have a solution.
Will release 2.0.9 later this evening or tomorrow during day (Central time)

Alan,
May I ask what it is that you are trying to smooth out on the servos? It wouldn't be perhaps dealing with making FSphidgets work with 360 degree servos would it? :D
Yes I'm still tinkering with trying to make my flaps indicator operate in the 270 degree range like the real 737NG MIP. I know, I know, I should just buy a 180 degree servo, but i'm just super pickey. :o

Nope.
One thing to consider might be to add gearing to servo.
Ratio of about 2:3 should do it.
There are few places that sell smallish nylon gears over internet.

MattO,
Problem with analogs should be sorted out with 2.0.9.
