Should I go with 3 24inch monitors or 3 27 inch monitors?

The bigger the visuals the better as they say, but it depends on your cockpit, design and space available etc!

For 737 Capt side or maybe a Full Cockpit. Not sure if going full is worth it if it's just me.

Also do you think about taking screens out of the bezels and making a bezel that won't have the big spaces between monitors?

Your question is a little confusion.
Are you asking which monitor to use for the instrument panel?
If so it depends what MIP you are using.
24" & 27" are too big for most panels, unless you are building your own and realism is not a factor, in which case nobody can answer your question.
If they fit with your idea, then they are the right size.
It is straight forward removing the bezels, a few screws and they normally click off. Be careful of the controls but they can usually be tucked away somewhere.
For visuals - as have been said the bigger the better. I am looking at 3 50" tv's for my visuals.
