If you would like to remove the entire cockpit interior from the FSX VC, you can use an empty interior airplane model in place of the normal file. I believe there is an empty file used by WidevieW.
It may not be completely empty. It may just have one or two small polygons to keep FSX happy.

Hi,
In FS9, I have used a hex editor to remove the VC before with great luck. Always make a backup of the file before you change it (of course)
Here is the complete thread on how to do this..

Try the fourth our fifth post down by Douglas K. He explains it quite well!
Hope this helps, Jeff
Here is the specifically relevant text from his post:

Yes, you can! As far as removing the VC from the A/C model is concerned, it is perfectly possible and actually quite simple to do, involving only a hex editor and two changes to the aircraft.mdl file.
A good hex editor can be found here (Hex Workshop 4.1 - shareware but fully functional for long enough to get the job done and then some):
http://www.bpsoft.com/downloads/
Open the mdl file you want to edit and search for the following hex value: 0022003900
In the first two occurences of that string, simply change the 39 in 0022003900 to 00. It should now look like this: 0022000000. Save the changes, OK the creation of the backup file then exit Hex Workshop to test it out in MSFS.
I have found that this works on mdl files created in GMAX, FSDS, and FSDS2. It works on the default FS9 A/C, including the new vintage models. It takes two minutes at the most to complete, and if a computer moron like me can do it, then anyone can, including chimpanzees.
If you decide to go this route, be sure you use your new mdl file powers for good, not evil.

Below is an answer from Bill Leaming of Eaglesoft to a post called "Way to remove panel from VC?" at AVSIM.com. Bill is a very knowledgeable gauge programmer.
"Removing the VCockpitXX sections will only get rid of the gauges.
The only way you might get rid of the visual vc model and leave the prop would be to edit all the textures used for the vc panel to be transparent.
With FSX there's no need to 'hex edit' anything, since the VC is simply the seperate xxx_interior.mdl...
...simply edit the model.cfg file and comment out the interior entry to get rid of it entirely!

The Dreamfleet 727 has the option of loading a VC cockpit with the flight model or not. Great for builders, but the intent was to reduce the frame hit when in VC mode.
Hopefully, we'll see more third-party aircraft using this feature as standard.
The hex editor does work though. I tried it out on other aircraft.Boeing Skunk Works
