New rotary encoder interface board
I see that Desktop Aviator are now advertising an interface board for around $50 which will interface up to 6 rotary encoders, or a range of other switches.
Details at www.desktopaviator.com/Products/Model_2090/index.htm
They are also advertising rotary encoders at $2.25 which seems very cheap compared with some figures I have seen here.
I have one of their 1010 avionics panel boxes - a simple unit which did just what it should for a reasonably cheap price, and no problem shipping to the UK.
I don't know how this new unit compares with existing products - what do the experts think?

The new board is nice. It should give you no problems.
